This may not look like it but it is a lot of nettles.  At this time of year, as one of the first greens we see round here,  we  most often just steam it, add butter & s& p & serve with meals.

Sprouted grain biscuits turned out well...
something like this but not exact

3 cups sprouted grain flour
1  C raw goats milk
2T butter
bit less than 1 tsp salt
1 tsp baking soda

mix, but not over mix, dough is a bit wettish.
break off small balls & flatten in palm
place on buttered pan
bake 20 minutes-ish, until golden brown
serve with butter!

This was sheer brilliance, basically an omelette poured into a muffin tin & baked 15 mins.  The boys love this.

Experimenting with no knead sourdough.  I think the bread likes this freedom to do its own thing.  Even if  some kneading occurs it can be more with just the finger tips.

  2. OMG. this all looks AMAZING. omelette muffins?! GENIUS! i am hoping to get to my nettling this week. was thinking of putting some into sauerkraut, what do you think?!
